Ingredients:
250g of salmon
3 small garlic cloves
1 cup baby spinach
1 cup mushrooms
2/3 cup of gluten-free pasta
1 tsp. Olive oil
Instructions:
Season salmon with salt and pepper & cut three small openings and place the garlic cloves. Place salmon, skin side down, on a non-stick baking sheet or in a non-stick pan with an oven-proof handle. Bake until salmon is cooked through, about 12 to 15 minutes.
In a pan, add the olive oil and baby spinach and mushrooms until sautéed.
Boil the gluten-free pasta and add it the veggies.
